  • 3 delicata squashes (about 1 pound each), sliced in half and seeded
  • 3 tablespoons unsalted butter, divided
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 1 small onion, diced
  • 1 small sprig of thyme
  • 3 cups vegetable broth, chicken broth, or low-sodium canned broth
  • 1/3 cups heavy cream
  • 1/4 cup crème fraîche (optional)
  • 1 small black truffle, shaved (optional)


Cooking Instructions

To begin, preheat your oven to 300°F (150°C). Arrange the squash halves, cut side up, on a baking sheet lined with foil. Place half a teaspoon of butter in each squash and generously season with salt and pepper. Pour in about 1/8 inch of water onto the baking sheet and roast the squash for 45 minutes, or until they are fork-tender.

While the squash is baking, heat the remaining two tablespoons of butter in a large saucepan over low heat. Add the chopped onion and thyme, allowing them to cook gently until the onion is softened but hasn’t taken on any color, approximately 5 minutes.

Once the squash is done roasting, scoop out the flesh and add it to the saucepan along with the broth and heavy cream. Increase the heat to moderate and cook, stirring occasionally, until the mixture reduces by about one-fourth, which should take around 20 minutes.

Now it’s time to blend this heavenly concoction! Puree the mixture in batches using a blender or food processor until smooth. Strain the soup back into a clean saucepan and season with salt and pepper to taste.
