2 pounds fresh Brussels sprouts, trimmed and halved (approximately 8 cups)

1/4 cup olive oil

2 teaspoons fresh thyme leaves, plus extra for decoration

1/2 teaspoons kosher salt

1/2 teaspoon black pepper

For the Sun-Dried Tomato Aïoli:

1/2 cup mayonnaise

2 tablespoons finely chopped sun-dried tomatoes drained from oil, with an additional 2 teaspoons of oil

1 teaspoon fresh lemon juice

1/4 teaspoon smoked paprika

1/4 teaspoon kosher salt

1 garlic clove, grated (about 1/4 teaspoon)

Preparation Steps

Start by preheating your oven to 425°F, placing racks in both the upper and lower thirds. In a large mixing bowl, combine the halved Brussels sprouts with olive oil, fresh thyme, kosher salt, and black pepper, tossing until everything is well-coated. Distribute the mixture evenly between two rimmed baking sheets, ensuring the cut sides of the sprouts are facing down.

Place both sheets in the oven simultaneously. Halfway through the cooking process, swap the positions of the sheets to ensure even roasting. Bake for about 20 to 25 minutes, or until the sprouts are tender and the outer leaves are beautifully browned and crispy.

While the Brussels sprouts are roasting, prepare the sun-dried tomato aïoli. In a small mixing bowl, whisk together the mayonnaise, chopped sun-dried tomatoes, their oil, lemon juice, smoked paprika, kosher salt, and grated garlic until smooth. Cover it and refrigerate until you're ready to serve.
