Easiest Chicken and Leek Soup

This delectable dish will take approximately 30 minutes to prepare and serve 4 people. A perfect meal for a cozy evening or a gathering with friends!

Ingredients

  • 2 tablespoons extra-virgin olive oil, divided
  • 2 medium leeks, thinly sliced (white and tender green parts only)
  • 1/2 pound cremini mushrooms, thinly sliced
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 1 pound skinless, boneless chicken breast halves, cut into 2-inch pieces
  • All-purpose flour, for dusting
  • 1/2 cups chicken stock or low-sodium broth
  • 1 tablespoon fresh thyme, chopped
  • 2 tablespoons sour cream
  • 2 teaspoons Dijon mustard

Cooking Instructions

Start by heating 1 tablespoon of extra-virgin olive oil in a skillet over moderate heat. Toss in the sliced leeks and sauté for about 7 minutes, stirring occasionally until they become tender.

Next, add the sliced cremini mushrooms to the skillet. Season with kosher salt and freshly ground black pepper. Cover the skillet and let the mixture cook until the mushrooms soften, roughly 4 minutes. Once done, transfer the leeks and mushrooms to a plate.

Now, it's time to prepare the chicken. Season the chicken pieces with salt and pepper, then lightly coat them with all-purpose flour, shaking off any extra flour. In the same skillet, pour in the remaining tablespoon of olive oil and add the chicken. Cook until golden brown, about 2 minutes on each side.

Pour in the chicken stock and sprinkle in the chopped thyme. Allow it to simmer over medium heat until the chicken is just cooked through, which should take around 1 minute. Use a slotted spoon to move the chicken to the plate containing the vegetables.

Continue simmering the stock until it reduces by half, approximately 2 minutes. Return the chicken along with the leeks and mushrooms to the skillet and let them simmer on low heat until everything is warmed through, about 1 more minute.

In a small bowl, mix together the sour cream and Dijon mustard until well blended. Stir this mixture into the skillet with the stew, taking it off the heat once combined. Finally, adjust seasoning with salt and pepper to your liking and serve up this delicious creation!
