Ingredient List
• 1 pound of dried spaghetti
• 3/4 cup of high-quality extra-virgin olive oil
• 12 cloves of garlic, thinly sliced
• 2 teaspoons of crushed red pepper flakes, plus some extra for serving
• Kosher salt and freshly cracked black pepper to taste
• 1/3 cup of fresh parsley, finely chopped
• 2 tablespoons of fresh lemon juice, with additional lemon wedges for serving
• 1/2 cup of freshly grated Parmesan cheese, plus more for garnish
Cooking Instructions
1. Begin by bringing a large pot of salted water to a vigorous boil. Once boiling, add the spaghetti and cook it for about 8 to 10 minutes, or until it reaches the desired al dente texture. Be sure to reserve 1 cup of the pasta cooking water before draining the spaghetti.
2. In the meantime, heat the extra-virgin olive oil in a large skillet over medium-low heat. Add the sliced garlic and sauté, stirring constantly, until it's beautifully golden brown, which should take about 3 minutes.
3. Sprinkle in the crushed red pepper flakes and a generous pinch of both salt and black pepper, mixing well to combine. After that, introduce the drained spaghetti to the skillet and toss it vigorously, adding a splash of the reserved pasta water until the spaghetti is completely coated in the aromatic oil and seasonings.
4. Remove the skillet from the heat and stir in the chopped parsley, lemon juice, and grated Parmesan cheese. Toss everything together thoroughly, ensuring that it's seasoned to your liking. Feel free to adjust with more salt if desired.
5. Serve your delicious spaghetti garnished with additional Parmesan cheese, lemon wedges, and a sprinkle of red pepper flakes for an extra kick on the side.
