Ingredients
- 2 ripe mangoes, peeled, pitted, and cut into thin strips
- 1 to 5/4 pounds of Napa cabbage, halved and sliced finely
- 1 red bell pepper, cut into thin strips
- 1/2 red onion, sliced thinly
- 6 tablespoons of fresh lime juice (approximately from two limes)
- 1/4 cup of rice vinegar
- 2 tablespoons of your favorite oil
- 1/2 teaspoon of salt
- 1/4 teaspoon of red pepper flakes (or adjust to your liking; optionally use chile paste)
- 1/4 cup of fresh mint leaves, sliced thin
- 1/4 cup of toasted cashews, roughly chopped
Cooking Instructions
In a large mixing bowl, combine the mango slices, thinly sliced Napa cabbage, red pepper, and red onion. In a separate small bowl, whisk together the lime juice, rice vinegar, oil, salt, and red pepper flakes until well blended. Pour the dressing over the slaw and mix thoroughly.
You can serve this crunchy slaw right away or allow it to chill in the refrigerator for about an hour, letting the flavors meld together beautifully. Just before serving, gently toss in the fresh mint leaves and top with the chopped cashews for an added crunch.
