Delicious Chorizo and Corn Soup: A Flavor Fiesta

Ingredients:

  • 2 pounds fresh Mexican chorizo
  • 2 cups yellow onion, finely chopped (from 1 large onion)
  • 3 poblano peppers, seeded and diced
  • 1/4 cup fresh oregano, chopped
  • 6 garlic cloves, minced (about 2 1/2 tablespoons)
  • 3 cups chicken stock (unsalted)
  • 2 (15-ounce) cans pinto beans, drained and rinsed
  • 1 (10-ounce) can tomato puree
  • 1 tablespoon olive oil
  • 3 cups fresh corn kernels (from 4 ears of corn)
  • 2 ounces Cotija cheese, crumbled (about 1/2 cup)
  • Optional toppings: diced avocado, fresh cilantro, sliced red cabbage, roasted pepitas

Cooking Instructions: Stirring Up Savory Flavors

To start this culinary adventure, heat a large Dutch oven over high heat. Add the chorizo and cook, stirring frequently, until it becomes crumbly and slightly browned, around 6 to 7 minutes. Carefully drain off all but 2 tablespoons of the drippings; feel free to keep all the drippings for more flavor if you prefer.

Next, introduce the finely chopped onion and diced poblanos to the pot. Stir occasionally, allowing them to soften for about 4 to 5 minutes. Then, incorporate the oregano and minced garlic, continuing to stir for an additional 2 minutes to release their fragrant aromas.

Pour in the chicken stock, add the drained pinto beans, and mix in the tomato puree. Bring the mixture to a boil, then lower the heat to medium and let it simmer for 5 minutes. This step will help the flavors meld beautifully.

Meanwhile, heat a large cast-iron skillet on high. Add olive oil, swirling it to cover the surface. Toss in the fresh corn, and cook while stirring often until the kernels are lightly charred, about 2 to 3 minutes.

Once your soup has reached optimal flavor, ladle it into bowls, generously topping each serving with the charred corn and crumbled Cotija cheese. Don’t forget to add your favorite toppings like diced avocado, fresh cilantro, sliced red cabbage, and roasted pepitas to create a delightful flavor explosion.

This recipe is crafted with care to bring you a warm and inviting meal that celebrates the bold flavors of Mexican cuisine. Enjoy every spoonful!
