Essential Ingredients
- 1 rib eye steak (about 1 inch thick), trimmed and tied
- 1 teaspoon kosher salt
- 1 teaspoon cracked black pepper
- 1/4 cup unsalted butter, divided
- 1 tablespoon neutral oil (like grapeseed)
- 1/4 cup minced shallots
- 1/2 cup red wine
- 1 cup homemade beef broth
Cooking Instructions
Start by seasoning your rib eye steak liberally with kosher salt and cracked black pepper. Make sure to press the pepper into the meat for extra flavor.
In a large stainless steel skillet, melt 1 tablespoon of butter along with the neutral oil over medium-high heat. Once the butter is bubbling, carefully add the seasoned steak to the pan. Sear it for about 2 minutes until it develops a beautiful, brown crust while rendering some fat.
Flip the steak and continue searing for another 2 minutes. Using your tongs, secure the steak and roll the edges against the hot pan surface, allowing them to caramelize.
Lower the heat to medium and lay the steak flat in the pan. Cook until it reaches your preferred doneness, estimating 2 to 2.5 minutes per side for a perfect medium-rare. Once done, transfer the steak to a cutting board and let it rest, pouring off excess fat while keeping the flavorful bits (fond) in the skillet.
Add 1 tablespoon of butter to the skillet, allowing it to melt into the fond. Stir in the minced shallots and cook for approximately 2 minutes until they turn tender and translucent, infusing the butter with their sweet flavor.
Next, pour in the red wine to deglaze the pan, scraping up any flavorful residues. Let it simmer until the liquid reduces by half, roughly 3 minutes.
Incorporate the beef broth and allow the sauce to simmer further until it thickens enough to coat the back of a spoon.
Just before serving, mix in the remaining 2 tablespoons of butter, gently shaking the pan to blend in the melted butter and enhance the sauce's richness.
Finally, slice the rib eye steak into portions and arrange them on two plates. Generously drizzle the decadent wine pan sauce over the steak and enjoy this sumptuous dish!
