Cooking Time & Portion Details

Total Duration: 45 minutes

Servings: 4 people

The Essential Ingredients

  • 1 lemon, cut in half
  • 4 tablespoons of extra-virgin olive oil, split
  • 1 package (17.5 oz) of shelf-stable potato gnocchi
  • 8 garlic cloves, thinly sliced
  • 1/3 cup of coarsely chopped, well-drained capers
  • 2 cups of dry white wine
  • 2 cups of low-sodium vegetable or chicken broth
  • 6 tablespoons of unsalted butter
  • 1/4 cup of finely chopped fresh parsley
  • Freshly ground black pepper to taste

Cooking Instructions

Step 1: Squeeze the juice from one lemon half into a small bowl and set it aside. Thinly slice the other half, discarding the seeds for a fresh burst of flavor later.

Step 2: In a large skillet over medium-high heat, warm 2 tablespoons of olive oil. Add the gnocchi and sauté, stirring occasionally, until they develop a light golden color, which should take about 5 minutes. Once done, transfer them to a plate.

Step 3: In the same skillet, incorporate the sliced garlic, drained capers, and the rest of the olive oil. Sauté until the garlic is tender and aromatic, typically 2 to 3 minutes. Raise the heat to high, introduce the white wine, and allow it to simmer. Keep stirring until the wine reduces significantly—this should take around 7 to 10 minutes. Then, add the vegetable or chicken broth along with the butter. Cook while stirring frequently until the sauce thickens, approximately 6 to 8 minutes.

Step 4: Place the gnocchi back into the pan, along with the reserved lemon juice and slices. Gently mix until the gnocchi are coated, warm, and soft, which will take about 2 to 3 minutes. Finally, take the pan off the heat and stir in the chopped parsley, finishing off with a sprinkle of black pepper for extra flavor.
