Ingredients

  • 1 tablespoon unsalted butter
  • 1/2 cups walnuts
  • 1/2 cup honey, divided
  • 1/3 cup plus 3 tablespoons cold water, divided
  • Canola oil, for frying
  • 3 tablespoons mayonnaise
  • 2 tablespoons sweetened condensed milk
  • 2 teaspoons fresh lemon juice
  • 2 teaspoons soy sauce
  • 1/3 cup all-purpose flour (approximately 1/2 ounces)
  • 2 teaspoons baking powder
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon kosher salt
  • 1/2 pounds large peeled and deveined raw shrimp (size 21-30 count)
  • Sliced scallions and sesame seeds for garnish

Instructions

To start, prepare your workspace by lining a small baking sheet with parchment paper. Melt the butter in a large saucepan over medium-high heat, then add the walnuts along with 1/4 cup of honey and 3 tablespoons of cold water. Bring this mixture to a boil, then reduce the heat to medium-low. Let it simmer, stirring occasionally, for about 8 minutes until the glaze thickens and coats the walnuts nicely. Once done, remove from heat and spread the candied walnuts onto the lined baking sheet, using a spatula to separate them quickly. Allow them to cool completely for approximately 15 minutes.

Next, clean the saucepan and pour in about 2 inches of canola oil, heating it over medium-high until it reaches 350°F. While the oil heats up, combine the mayonnaise, sweetened condensed milk, lemon juice, soy sauce, and the remaining 1/4 cup of honey in a large bowl. Mix until the ingredients are well incorporated and set this mixture aside.

Prepare your frying station by placing a wire rack inside a large rimmed baking sheet. In another large bowl, mix together the flour, baking powder, garlic powder, black pepper, and kosher salt. Add the remaining 1/3 cup of cold water and stir until smooth. Toss the shrimp in the batter until they’re fully coated, shaking off any excess before frying.

Fry the shrimp in batches in the hot oil until they turn a gorgeous golden brown, which should take about 4 minutes per batch. Once cooked, drain the shrimp on the wire rack to remove excess oil.

Finally, transfer the fried shrimp and the candied walnuts into the honey mixture and gently fold everything together using a rubber spatula until the shrimp are evenly coated. For the finishing touch, sprinkle with sliced scallions and sesame seeds, and enjoy this delightful dish!
