Ingredients

  • 3 tablespoons of extra-virgin olive oil
  • 1 pound of cremini mushrooms, cleaned and sliced
  • 2 tablespoons of unsalted butter
  • 2 medium leeks, trimmed and finely sliced
  • 4 cloves of garlic, thinly sliced
  • 1/2teaspoons of kosher salt, divided
  • 1 pound of short pasta (penne, casarecce, or pipe rigate work best)
  • 3 cups of water
  • 1/3 cups of low-sodium vegetable broth
  • 2/3 cup of dry white wine
  • 1/2 cup of heavy whipping cream
  • 1/2 cup of grated Parmigiano-Reggiano cheese (around 2 ounces), plus extra for serving
  • 2 tablespoons of chopped fresh dill
  • 2 tablespoons of chopped fresh flat-leaf parsley
  • 1 teaspoon of lemon zest and 1/2 teaspoons of fresh lemon juice (squeezed from 1 lemon)
  • 1/2 teaspoon of black pepper

Cooking Method

Start your culinary adventure by heating the olive oil in a large saucepan over medium-high heat. Toss in the sliced mushrooms and cook them, frequently stirring, until all the moisture disappears, approximately 12 minutes, resulting in deep, rich flavors.

Next, add the butter and allow it to melt. Introduce the leeks, garlic, and 1 teaspoon of kosher salt, cooking until the leeks soften, which should take around 4 to 5 minutes.

Now it's time for the pasta! Stir in the short pasta, water, vegetable broth, wine, and the remaining 1/2 teaspoons of salt. Crank up the heat to high until it reaches a rolling boil. Once boiling, reduce to medium heat and simmer while stirring occasionally. Cook until the pasta is about 3 minutes away from being al dente, keeping an eye on the package directions.

In the final touches, stir in the heavy cream, allowing everything to simmer for another 3 minutes until the sauce beautifully clings to the pasta. Remove from the heat and enhance with Parmigiano-Reggiano, fresh herbs, lemon zest, lemon juice, and pepper. Serve in shallow bowls topped with an extra sprinkle of cheese for that final gourmet touch!

Enjoy this rich and soul-warming dish that's perfect for any occasion!
