This delicious soup takes a total of about 45 minutes to prepare and cook, making it a perfect dish for a cozy evening. Prep time is around 15 minutes, followed by a cooking time of 30 minutes.
Ingredients
- 1/4 pound bacon, chopped into thin strips
- 1 onion, diced
- 2 carrots, diced
- 3 stalks celery, diced
- 1 turnip, peeled and cubed
- 1/2 teaspoons caraway seeds
- 1/2 pounds green cabbage, shredded
- 7 cups low-sodium chicken stock or homemade broth
- 2/3 cups canned diced tomatoes ([15-ounce] can), with juice
- 1/2 tablespoons brown sugar
- 1/2 teaspoons salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 cup cider vinegar
- 1/2 cup raisins
- 1/4 cup fresh dill, chopped (optional)
- Sour cream, for garnish (optional)
Directions
Begin by heating a large saucepan over medium heat, adding the bacon strips. Cook them until they become crispy. Once ready, remove the bacon using a slotted spoon and place it on paper towels to absorb excess grease. Leave about 1 tablespoon of the bacon fat in the pan.
Lower the heat to a medium-low setting and introduce the diced onion, carrots, celery, and turnip. Sauté the mixture for around 5 minutes, stirring occasionally, until the vegetables begin to soften.
Next, sprinkle in the caraway seeds and add the shredded cabbage along with the chicken broth. Increase the heat until it reaches a simmer. Once simmering, reduce the heat and cover the pot. Let it cook for approximately 5 minutes, allowing the cabbage to wilt down.
Now it’s time to mix in the diced tomatoes, brown sugar, salt, black pepper, cider vinegar, and raisins. Cover the pot again and let it simmer for about 30 minutes, merging the flavors beautifully.
Finally, stir in the crispy bacon and the optional fresh dill if you choose to include it. Serve your hearty cabbage soup hot, topped with a dollop of sour cream for a creamy finish, if desired.
