Ingredients You'll Need
- 12 cups chilled water
- 1 tablespoon whole black peppercorns
- 3 carrots, left unpeeled and cut in half
- 1 yellow onion, unpeeled and halved
- 1 small fennel bulb, vertically halved with stalks chopped
- 6 ounces of fresh shiitake mushrooms (approximately 10)
- 2 celery stalks, halved crosswise
- 1 large bulb of garlic, halved
- 8 sprigs of fresh parsley
- 6 sprigs of thyme
- 3 fresh bay leaves
- 1 (3-ounce) rind of Parmesan cheese (optional)
- 2 teaspoons kosher salt (optional)
Cooking Instructions
To kick off, combine all the prepared ingredients in a large stockpot. Pour in the cold water and add black peppercorns, carrots, onion, fennel, mushrooms, celery, garlic, parsley, thyme, bay leaves, and, if you opt for it, the Parmesan rind.
Heat the mixture over medium heat until it reaches a gentle boil. Allow it to boil uncovered for about 30 to 40 minutes. Once the action starts, lower the flame and let it simmer uncovered for an additional 45 minutes. This simmering period is crucial as it allows the flavors to meld into a rich, fragrant broth.
After simmering, strain the stock through a fine mesh strainer into a large, heatproof container, discarding the solids. If you choose to use salt, add it at this stage—or for a versatile stock, leave it unseasoned. Allow the stock to cool naturally at room temperature for one hour before covering it and placing it in the refrigerator.
