Crafting the Perfect Porch Swing Cocktail

Revive your summer days with the delightful Porch Swing cocktail! It’s been a while since I indulged in this concoction, and I had forgotten how it carries a hint of sweetness. While my husband enjoyed it just fine, I prefer drinks that dance lightly on the palate. Next time, I'm planning to whip up a zesty lemonade to balance the sweetness—more details on that below!

I can't recall if the original recipe calls for ice cubes, but I've found that they add a refreshing touch that I simply love. Interestingly, this drink is reminiscent of the classic Pimm's Cup—with a twist. By incorporating gin into the mix, we elevate the drink with a delightful depth of flavor. While Pimm's No. 1 already includes gin, adding more gives it an appealing kick that I can't resist.

Ingredients

  • 1/2 ounces (3 tablespoons) gin (Hendricks is recommended; Tanqueray works well too)
  • 1/2 ounces (3 tablespoons) Pimm’s No. 1 liqueur
  • 4 ounces (1/2 cup) homemade lemonade (see recipe below)
  • 7-Up or any lemon/lime soda of your choice
  • 10 thin half-moon slices of cucumber (I used an unwaxed English cucumber)

Instructions to Create Your Refreshing Cocktail

Begin by pouring the gin, Pimm's No. 1, and freshly made lemonade into a tall Collins glass. Toss in a few ice cubes and finish with a splash of 7-Up, ensuring that refreshing fizz. Adorn your drink with the cucumber slices for that perfect summer garnish.

Homemade Lemonade

  • 1 part freshly squeezed lemon juice
  • 1 part simple syrup, adjusted to taste (I prefer using 1/2 to 3/4 of a part next time)
  • 2 parts water

Quick Simple Syrup Recipe

Here’s my plea: please skip the pre-made simple syrup sold at stores—it’s just not worth it! For a homemade version, simmer equal parts water and sugar (I usually use one cup of each, yielding about 1 1/2 cups of syrup) until the sugar dissolves. Allow it to cool. For a quicker option, simmer one part sugar with half as much water until dissolved. Then, stir in the remaining cold water—this method speeds up the cooling process, letting you return to mixology before you know it!

Now that you're equipped with these vibrant recipes, you're ready to impress friends and family with your cocktail-making skills this summer. Cheers to refreshing drinks on the porch!
